From time to time, you may want to delete all of the content in a Canvas course site and start from scratch. This option is typically used after running the "Delete All Course Content" command in a Canvas course. The "Reapply Default Settings" button applies a template to your course to restore the default settings and content established for courses in your academic unit. Most courses use the Indiana University defaults, but your campus, school, or department may opt to override IU's default with custom settings.

Apply default settings and content. When this option is invoked, the default template for the course—based on the course's location in the Canvas academic hierarchy—is applied to the course, restoring content and/or settings.
